How to cook a turkey?!

    Right, firstly, this is not a wind up.... I need to know how to cook a 20lb turkey from frozen and as Thanks giving is just around the corner I thought I would ask... Normally my mum did this so we never had to worry, but unfortunately she passed away at the end of January without passing on her secret! We are having a Christmas dinner this year but want to do a trial run before hand so if anybody knows how to cook the perfect turkey I would be greatly appreciated!!..

    How long will it need to thaw out before cooking.
    improving the taste...
    Tell tale signs like juices running clear etc

    i can use either an oil fired AGA cooker as the bird will fit into the oven or a conventional electric oven if this helps!

    There are a million ways to cook a turkey per the link.

    The simple advice is cook lower(hence slower) and get a meat thermometer to prevent overcooking. For example, 325 F (whatever that is in centigrade) until until the thermometer reads 160 F in the breast meat area. The turkey will cook some after you take it out of the oven. Allow it to sit at least 30 min prior to carving. If you have a convection oven, most tend to cook at 25 F lower than regular oven. If the breast starts getting too brown, place some foil lightly over it (not really touching).

    First of start defrosting now, it takes 3-4 days to thaw. I deep fry my turkey. If you go to foodnetwork.com that will help you cook your turkey all kind of different ways. Just pick something that appeals to you and go from there. I would deffently brine it first before cooking, this makes it very juicy. I could go on forever that is why I suggested going to foodnetwork.

    Once you do this you will never go back to oven cooked turkey. Good luck. If you roast/bake baste the turkey with the juices every now and then. This will help keep it moist and flavorful.
